The weather was so kind today. Oval Mint Dosai with Paneer Bhurji/Masala was our tiffin/evening indulgence.
I added some fresh mint leaves while grinding the batter to make these minty dosai. As we all love paneer/ cottage cheese, the tangy bhurji was a big hit .

Simple comfort food today at home..indian bread with mixed vegetable curry cooked in Instant pot 😊. I think you can see the beet root in my bowl 😁.
This is a healthy curry which I cook when I buy all different fresh veggies 👌, and my family loves to eat.
Its an easy recipe for all veg lovers 🌿
👉We put the IP in saute mode, fry mastard seeds ( substitute with cumin seeds/ nigella seeds), one red chilli and curry leaves( optional), and add chopped beetroot, carrots, french beans, potatoes, green peas ( cauliflower can be used too)..saute the vegetables just a little , add salt, turmeric, coriander powder, and a little cumin powder, ginger garlic paste. Add water and cook in high pressure for 6 mins.
Your meal is ready to serve 🍽️. You can keep more water too, and add celantro and green chilli🌶️. My son wants now 🐔, which is being marinated now, soon recipe will be posted.

Brunch! I was making that rice - basically stirred up cooked rice with chicken curry gravy, and it just struck me how much I used to eat before 😱🤕 I was a stress eater, lacked portion control and I 'inhaled' my food. These three together is a very bad mix and that was the reason I started piling up kilos. As my anxiety and stress shot up I would eat more and though I ate 'healthy' meals my portions were out of the world. To this day I can eat like that n I can eat more than @paalada_prathaman 😁 n he is near 6 ft and I stopped right at 5 👸🏽 so the fact that I consumed more food than him is ridiculous. Because I ate fast I wouldn't let me body feel it getting full and I would be bloated after that too. And majorly my plate looked like this but with a lot more rice!
Rice is yum, it's just solid food and comfort food even n your body craves it cuz it's carb and a ready source of energy even. N I love rice. My love for rice combined with my way of eating meant I was just flooding my body with unnecessary carbs which got converted to fat. As I said it's dense, it's solid carbs and gives you a lot of energy. Thing is for our lifestyle now we don't need that much energy. I don't. I used to see Jayanchettan, our handyman-gardener have a hill of rice but he needed it after his toil. People who do hard physical labour need that much solid carbs in their diet. A work from home or 9-7 job person or housewife doesn't, even if you exercise moderately. The excess carbs you intajr, after your body works its get magic gets stored as fat. N you continue in this dangerous cycle!
Today I ate slowly and by the time I was done about 3/4th of this plate I started feeling full. Before I would have twice the quantity of the rice shown on the plate n wolf down the lot in less than 5 mins max, no I m not kidding. Today it took me around 12-14 mins, yea I time to ensure I eat slow now.
One major lesson and tip to those who ask me how I lost weight:
Watch your portions. Only 1/4th of your plate shud be solid carb, you can skip it once in a while too. Fill the rest with veggies, fats and protein 👩
PS: my protein intake is almost negligible here but I plan to balance it later 😊

Janmastami Sugar Free Pineapple Sheera / Halwa
INGREDIENTS
• 1 cup semolina / rava / suji
• 3 tsp ghee
• 10 cashews and raisins
• ½ cup pineapple chunks
• 3 cups water
• ½ cup XyloSweet sugar
• 2 pinches of elaichi / cardamom powder
• pinch of saffron / saffron colour, optional
• 3 tbsp milk - to make saffron milk
DIRECTIONS
1. dry roast 1 cup semolina / suji / bombay rava until it start to smell aromatic. transfer to a plate. allow to cool down.
2. meanwhile, add ghee and roast cashews until golden and then add raisins and fry till they swell. remove in a plate and set aside.
3. time to saute pineapple chunks for 2 to 3 minutes.
4. once done, add 3 cups of water and get to rolling boil.
5. keep the flame on low and slowly add suji little by little. keep on stirring continuously. make sure there are no lumps forming.
6. now add half cup of XyloSweet sugar and give a good stir.
7. add cardamom powder and fried dry fruits. stir well.
8. now add 3 tsp of saffron milk and give a good stir. (optional)
9. lower the flame. cover and cook until all the water evaporates.
10. pineapple kesari taste great when served hot. it is also good when served warm or cold.

I can’t seem to get back into the gym. 🤷🏽‍♀️ Since we got back from honeymoon I’ve been totally slacking and have completely lost my gym mojo. To introduce a bit of variety, we played tennis yesterday and it was actually quite comical to see how bad I was. I haven’t played for 15 years and the 5 year old in the court next to me was smashing the ball like a mini Andy Murray, completely putting me to shame 😂
Anyway, luckily for me Rowan is a patient soul, I’ll get back into the swing of it eventually 😊
Serves 2 | easy peasy | 20 mins | 332 calories per person
2 tbsp olive oil 
1 pack of @tofooco smoked tofu (225g)
1 red pepper, chopped
1 small onion, chopped
2 cloves garlic, peeled and minced
1 teaspoon ginger, chopped
4 tbsp soy sauce
1 tablespoon cornstarch
1 tablespoon oyster sauce
1 tablespoon rice wine vinegar
2 teaspoons freshly-cracked black pepper (or more to taste)
Coriander ✔️Heat 1 tablespoon oil over medium-high heat in a pan and brown the tofu on all sides. Remove and set aside.
✔️Add the remaining 1 tablespoon oil to the same pan, along with the bell pepper, onion, ginger and garlic.  Cook for 5-6 minutes, stirring occasionally.
✔️ Add the soy sauce, cornstarch, oyster sauce, vinegar, black pepper with the veggies until combined.
✔️Stir in the tofu till it’s evenly cooked. Continue to cook for 1-2 minutes, or until the sauce has thickened.  Taste, and season with extra soy sauce and/or black pepper as desired.
✔️ Sprinkle some fresh coriander and enjoy 👌🏾

Battling some Tuesday blues(also a thing) and gloom ☁️ with this vegan Carrot Halwa/Gajjar Halwa! The last time I made carrot halwa, it was dairy-free but not vegan. I was hesitant to skip the ghee to make it vegan, just because it’s such an integral part of Indian sweets. I gave it a shot this time and used coconut oil instead of ghee. Similar to last time, I used coconut milk instead of regular milk and used coconut palm sugar as my sweetener. Surprisingly, I did not miss the ghee, and everyone liked it better than the traditional milk-based halwa! 🥕🤗
